Rainbow Rice Bowl with Lemongrass Peanut Sauce
Creamy Lemongrass Peanut Sauce and crispy Classic Chick’n Tenders make this bowl an extra special meal to share with friends.
For the bowl:
4 cups cooked rice
4 cups chopped veggies of choice
For the Thai Peanut sauce:
1/3 cup smooth peanut butter
¼ cup olive oil
2 tbsp lime juice
1 tbsp coconut aminos or soy sauce
1 tsp sriracha
1 tsp grated ginger
½ tsp grated lemongrass (or sub 1 tsp powdered lemongrass)
Sliced jalapenos, scallions, crushed peanuts, sesame seeds, lime wedges, optional
- Cook Dr. Praeger’s Classic Chick’n Tenders according to package instructions.
- Make the sauce by gently whisking together all ingredients in a small bowl. Taste and adjust.
- Divide rice among 4 large bowls. Arrange with veggies, top with Chick’n Tenders, and drizzle with sauce. Garnish with toppings of choice. Enjoy!
