For the Bowl: 

1 Dr. Praeger’s Heirloom Bean Veggie Burger

2 cups baby arugula

½ cup cherry tomatoes, halved

3 tbsp. red onion, diced

¼ cup chickpeas

¼ cup cucumber, diced

¼ cup kalamata olives, pitted

2 tbsp. feta cheese, to garnish (use vegan feta to make bowl completely plant-based!)

½ cup pita chips, to serve

Lemon Tahini Dressing:

¼ cup tahini

4 tbsp. lemon juice

1 tsp. maple syrup

2 tbsp. water, to thin

½ tsp. sea salt

½ tsp. black pepper


  1. Prepare lemon tahini dressing: add all ingredients to a mason jar. Secure jar with a lid and shake vigorously to combine. Set aside while you prepare the salad.
  2. Preheat oven to 450 degrees Fahrenheit. Add Dr. Praeger’s Heirloom Bean Veggie Burger to ungreased baking sheet. Cook for 7 minutes, flip, and cook an additional 5-6 minutes, or until golden brown. Remove from the oven and let cool slightly.
  3. Prepare bowl: to a large salad bowl add arugula, cherry tomatoes, red onion, chickpeas, cucumber, and kalamata olives. Garnish with Dr. Praeger’s veggie burger, feta cheese and serve with pita chips.
  4. Drizzle bowl with lemon tahini dressing and enjoy!
