Ingredients

  • 1 Dr. Praeger’s Black Bean and Quinoa Veggie Burger
  • 2 cups baby spinach
  • ½ cup white or brown rice
  • ¼ cup black beans
  • ¼ cup pico de gallo
  • 3 Tbsp. guacamole
  • 3 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • ¼ red jalapeno, thinly sliced
  • ¼ green jalapeno, thinly sliced

Directions

Serves: 1
Cook time: 15 minutes

  1. Prepare Dr. Praeger’s veggie burger according to package directions.
  2. Assemble taco bowl: Add spinach, rice, beans, and pico de gallo to a bowl. Top with veggie burger, guacamole, and sliced jalapenos.
  3. Drizzle with olive oil and lime juice.
  4. Serve with tortilla chips and enjoy!
