Ingredients

For the dumplings:

  • 2 Tbs. extra virgin olive oil, divided
  • ½ cup diced yellow onion
  • 1 cup finely chopped mushrooms (about 8 shitake or crimini mushrooms)
  • 1 cup finely shredded purple cabbage
  • 2 Dr. Praeger’s Asian Veggie Burger patties, frozen
  • 2 Tbs. veggie broth
  • 1 tsp coconut aminos (or soy sauce)
  • 1 tsp. rice vinegar
  • 1 tsp. chili sauce, optional
  • 25 gyoza dumpling wrappers

Sauce drizzle (optional):

  • 1 tsp raw honey
  • 1 Tbs. rice vinegar
  • 1 Tbs. coconut aminos or soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp. chili sauce, optional

Directions

Makes 25 Gyoza Dumplings
Cook Time: 3o minutes

  1. Preheat a large skillet over medium heat. Add 1 Tbs. olive oil to the pan and once hot, add the onion, and sauté for 4-5 minutes, until lightly caramelized and translucent.
  2. Add the mushrooms, cabbage, and veggie burgers to the pan along with the veggie broth, coconut aminos, rice vinegar, and chili sauce, if using. Cover the pan and cook for 5 minutes.
  3. Remove the lid, stir, and break up the veggie burgers. Cover with the lid, and cook for another 5-7 minutes, or until the veggies are tender and the burgers can easily crumble.
  4. Place a small bowl of water on your work station. Set a large plate aside (for finished dumplings) and remove the dumpling wrappers from the refrigerator.
  5. Dip your finger in the water bowl and dampen the outside edges of the dumpling wrapper. Add one heaping teaspoon of the veggie burger filling to the center of the wrapper and press the edges together. Place the finished dumpling on the plate, and repeat until all filling is gone.
  6. Rinse out the skillet, and place back over medium heat with the remaining Tbs. of olive oil. Once hot, carefully move each dumpling over to the pan, cover with a lid, and cook for 2-3 minutes on each side, or until lightly crisp and caramelized. To infuse the dumplings with steam, add 1 Tbs. broth to the pan along with the dumplings.
  7. Meanwhile, make the sauce by whisking all ingredients together until combined.
  8. Transfer the dumplings to a salad, bowl, or plate, and drizzle with the sauce.
