1 box Dr. Praeger’s Spinach Littles

1 can garbanzo beans

4 cups chopped, mixed veggies of choice (our favorites include: peppers, mixed potatoes, squash, and green beans)

2 tbsp olive oil

2 tsp Italian seasoning

1 tsp sea salt

black pepper, to taste


  1. Preheat oven to 400F.
  2. Arrange veggies, garbanzo beans, and Littles onto a large baking pan.
  3. Gently toss with olive oil, then sprinkle with Italian seasoning, salt, and pepper.
  4. Bake for 30 minutes, or until veggies are fork-tender and edges are crisp.
  5. Remove from the oven, cool slightly, and enjoy!
