2 Dr. Praeger’s Kale Veggie Burgers

1 cup quinoa, cooked

½ cup kidney beans

½ red bell pepper, diced

½ orange bell pepper, diced

½ yellow bell pepper, diced

½ cup purple cabbage, chopped

½ cup arugula

4 Tbsp. olive oil

2 Tbsp. lemon juice

2 Tbsp. tahini


Serves: 2
Cook time: 15 minutes

  1. Cook Dr. Praeger’s veggie burgers according to package directions. Remove from oven and set aside.
  2. To two mason jars add (to each) 2 Tbsp. olive oil, 1 Tbsp. lemon juice, and 1 Tbsp. tahini.
  3. Fill up each mason jar with layered ingredients: quinoa, beans, bell peppers, cabbage, cooked veggie burger, and arugula.
  4. Screw lids onto jars and store in the refrigerator until ready to eat.
  5. When ready to eat: simply shake the jar vigorously to distribute dressing. Pour salad into a bowl or eat from jar. Enjoy!
