Not Spicy Pineapple Salsa:

  • 2 cups diced pineapple
  • 1 ear sweet corn, cooked
  • ½ cup diced red onion
  • 1 lime, juice only
  • 1 tablespoon minced cilantro


Serves: 4
Cook time: 30 minutes

  1. Preheat oven to 425 degrees F. Cook Lightly Breaded Fishies according to package. They should be crispy on the exterior when done.
  2. Meanwhile, make pineapple salsa by microwaving ear of corn (in the husk) for 2 minutes on high. Then peel and chop off kernels. Stir together with other salsa ingredients and season with a pinch of salt.
  3. Assemble tacos by spreading a little sour cream onto a tortilla. Top with avocado, cooked Fishies, and a few spoonfuls of salsa.
