Deconstructed Breakfast Burrito
Breakfast tacos > breakfast burritos. Especially they’re topped with Dr. Praeger’s Four Potato Puffs!
Serves: 2 tortillas
Cook Time: 15 minutes
- Chop red bell pepper and mushrooms, then sauté in a cast iron pan with avocado oil. Add potato puffs and continue cooking until the mushrooms are soft and bell pepper has a slight char on the edges.
- While filling is cooking on the stove, warm tortillas either in microwave or in the oven
- Transfer burrito filling to tortillas, then fry two eggs in the same cast iron pan.
- Add eggs to tortillas, then top with avocado chunks.
