Cook Time: 15 minutes

  1. Chop red bell pepper and mushrooms, then sauté in a cast iron pan with avocado oil. Add potato puffs and continue cooking until the mushrooms are soft and bell pepper has a slight char on the edges.
  2. While filling is cooking on the stove, warm tortillas either in microwave or in the oven
  3. Transfer burrito filling to tortillas, then fry two eggs in the same cast iron pan.
  4. Add eggs to tortillas, then top with avocado chunks.
