2 Dr. Praeger’s Spinach Cakes

2 slices sourdough bread, toasted

2 heirloom tomatoes, sliced

¼ cup fresh mozzarella cheese, sliced

A few leaves fresh basil, cut thinly

1 Tbsp. olive oil

2 tsp. balsamic vinegar

Sea salt and pepper, to taste

Cook time: 15 minutes

  1. Prepare Dr. Praeger’s spinach cakes according to package directions.
  2. Prepare toasts. On top of toasted sourdough bread, layer heirloom tomatoes, spinach cakes, and mozzarella cheese. Sprinkle with sea salt, pepper, and fresh basil.
  3. Drizzle with olive oil and balsamic vinegar. Devour!
