California Waldorf Salad
Our completely plant-based take on the classic Waldorf using Dr. Praeger’s California Veggie Burger and Carrot Puffs!
1 package Dr. Praeger’s Carrot Puffs
1 cup halved purple grapes, + more for serving
1 green apple, diced
1/2 cup diced celery
1/4 cup raw walnuts, chopped
3-4 tbsp vegan mayonnaise or greek yogurt
1 head of bibb or butter lettuce, washed and trimmed
1 bunch vine-ripened tomatoes, halved or quartered
generous pinch of sea salt and pepper, to taste
generous drizzle of olive oil
lemon wedges, for serving
- Cook Dr. Praeger’s California Veggie Burgers and Carrot Puffs according to package instructions.
- Combine the grapes, apple, celery, and walnuts in a medium mixing bowl. Add the mayonnaise or yogurt, and stir until fully incorporated.
- Divide the lettuce into two large salad bowls. Arrange each bowl with two California Veggie Burgers, and half of the Carrot Puffs, Waldorf mixture, and tomatoes.
- Generously sprinkle each salad with sea salt and pepper, and drizzle with olive oil. Serve with lemon wedges, and enjoy immediately!
