California Veggie Summer Bowl
A bite of fresh summer sunshine, anytime you need it! This light and refreshing bowl is sure to help you feel satisfied and nourished in no time.
1 cup arugula
½ cup chickpeas
½ cup sweet potato crinkle fries, or ½ roasted sweet potato
¼ cup roasted brussels sprouts
¼ cup halved cherry tomatoes
1 handful fresh microgreens
1 tbsp. olive oil
1 tsp. apple cider vinegar
½ avocado, sliced
- Cook Dr. Praeger’s California Veggie Burger according to package directions.
- Assemble: add arugula, chickpeas, roasted sweet potato or fries, Brussels sprouts, cherry tomatoes, and micro greens to a large salad bowl.
- Top with California Veggie Burger, drizzle with olive oil and apple cider vinegar. Top with sliced avocado and sprinkle with sea salt and pepper, to taste. Enjoy!
