1 Dr. Praeger’s Heirloom Bean Veggie Burger

1/2 fuji apple, sliced

1/2 cup brussels sprouts, halved

1/4 delicata squash, sliced

1/2 cup cubed butternut squash

2 cups loosely packed salad greens

2-3 tbsp. dressing of choice (creamy works great here!)


  1. Preheat oven to 450F and line a baking sheet with parchment paper.
  2. Arrange the brussels and squash on the baking sheet, and drizzle with olive oil. Sprinkle with salt and pepper. Place the Heirloom Bean Veggie Burger next to the veggies, and bake for 10 minutes. Carefully stir the veggies and flip the burger, and cook for 5 minutes more, or until burger edges are crisp and veggies are fork-tender.
  3. Arrange the salad greens in a large bowl, top with cooked veggies and veggie burger, and garnish with sliced apple and avocado. Drizzle with dressing of choice.
