Apple Cinnamon Oaties Casserole with Pecan Crumble Topping

Ingredients
  

For the baked cinnamon apples:

  • 2 large green apples thinly sliced
  • 2 Tbs. real maple syrup
  • 2 Tbs. vegan or dairy butter melted
  • 1 tsp. ground cinnamon

For the casserole:

  • 2 boxes Dr. Praeger’s Oaties any flavor
  • 5 large eggs
  • 1 cup unsweetened plant-based or dairy creamer
  • 2 Tbs. real maple syrup
  • 1 tsp. ground cinnamon
  • pinch of pink sea salt

For the pecan crumble topping:

  • ½ cup pecans chopped
  • 2 Tbs. vegan or dairy butter softened
  • 1 Tbs. real maple syrup
  • ½ tsp. ground cinnamon

Instructions
 

  • Lightly grease an 8x8-inch baking dish with vegan or dairy butter.
  • Arrange 2 racks near the center of the oven. Preheat to 425°F.
  • Line two baking sheets with parchment paper.
  • In a medium bowl, combine the sliced apples, melted butter, maple syrup, and cinnamon. Stir to evenly coat the apples. Spread out onto one of the baking sheets. 
  • On the second baking sheet, arrange Dr. Praeger’s Oaties into a single layer. Place both baking sheets into the oven, and cook for 15 minutes, flipping Oaties & apples halfway through to ensure even browning.
  • Meanwhile, prepare the pecan crumble topping: combine all ingredients in a small mixing bowl, and stir until thoroughly combined. Set aside.
  • In a separate mixing bowl, whisk together the remaining casserole ingredients: eggs, creamer, cinnamon, and salt.
  • Arrange half of the cooked Oaties into a single layer at the base of the 8x8-inch baking dish and top with half of the baked cinnamon apples. Top the apples with the remaining Oaties, and top off with the remaining apples, so you have two layers of each. Pour the egg mixture over the entire casserole, and top with crumble mixture. 
  • Cover the dish with lightly tented foil, and bake for 30 minutes. Remove the foil and bake for another 15 minutes, or until the casserole is set and lightly golden brown.
  • Remove from the oven, let cool for 10 minutes, and then serve with a dusting of powdered sugar, seasonal fruit, and extra maple syrup for drizzling, if desired.
