Ingredients

  • 1 box Dr. Praeger’s Carrot Puffs  
  • 1 cup mozzarella cheese (or vegan alternative)
  • 1 15 oz. can black beans
  • 2 jalapeno peppers (diced finely)
  • 1 red pepper (diced finely)
  • 1 cup green onions (diced finely)
  • ½ cup cilantro
  • 1 tbls fresh lime juice

Directions

  1. Preheat oven to 350F
  2. Spread puffs onto In a roasting pan, then add cheese, red peppers, green onion, and jalapenos
  3. Bake in oven for 15-20 mins, garnish with cilantro and fresh lime juice.
